- Poblano peppers - 2 large
- Olive oil - 2 tablespoons
- Red onion - 1 small, diced
- Zucchini - 1 medium, diced
- Corn kernels - 150 grams (fresh or frozen)
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Corn tortillas - 4 small
- Lime - 1, cut into wedges
Steps
- Preheat your grill or BBQ to medium-high heat.
- Roast the poblano peppers directly on the grill until the skins are charred and blistered, about 10-12 minutes, turning occasionally. Once done, place them in a bowl and cover with plastic wrap to steam for 10 minutes.
- While the peppers steam, heat olive oil in a skillet over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened.
- Add the zucchini, corn, minced garlic, cumin, smoked paprika, salt, and black pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Remove from heat and stir in chopped cilantro.
- Once the poblano peppers are cool enough to handle, peel off the charred skin, remove the seeds, and stuff them with the vegetable mixture.
- Warm the corn tortillas on the grill for about 1 minute on each side.
- Assemble the tacos by placing a stuffed poblano pepper in each tortilla. Serve with lime wedges on the side.
