Ingredients

  • Poblano peppers - 2 large
  • Olive oil - 2 tablespoons
  • Red onion - 1 small, diced
  • Zucchini - 1 medium, diced
  • Corn kernels - 150 grams (fresh or frozen)
  • Garlic - 2 cloves, minced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Corn tortillas - 4 small
  • Lime - 1, cut into wedges

Steps

  1. Preheat your grill or BBQ to medium-high heat.
  2. Roast the poblano peppers directly on the grill until the skins are charred and blistered, about 10-12 minutes, turning occasionally. Once done, place them in a bowl and cover with plastic wrap to steam for 10 minutes.
  3. While the peppers steam, heat olive oil in a skillet over medium heat. Add the diced red onion and sauté for 3-4 minutes until softened.
  4. Add the zucchini, corn, minced garlic, cumin, smoked paprika, salt, and black pepper to the skillet. Cook for an additional 5-7 minutes until the vegetables are tender. Remove from heat and stir in chopped cilantro.
  5. Once the poblano peppers are cool enough to handle, peel off the charred skin, remove the seeds, and stuff them with the vegetable mixture.
  6. Warm the corn tortillas on the grill for about 1 minute on each side.
  7. Assemble the tacos by placing a stuffed poblano pepper in each tortilla. Serve with lime wedges on the side.
