Ingredients

  • Pork belly - 300 grams
  • Lime juice - 2 tablespoons
  • Corn tortillas - 4 pieces

  • Cilantro - 1/4 cup, chopped
  • Salsa verde - 1/4 cup
  • Radishes - 4, thinly sliced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 1 liter (for boiling)

Steps

  1. Cut the pork belly into small cubes (about 1 inch in size).
  2. In a pot, add the pork belly, salt, pepper, and enough water to cover the meat. Bring to a boil over medium heat.
  3. Reduce the heat and simmer for about 30 minutes until the pork is tender.
  4. Remove the pork from the pot and let it drain for a few minutes.
  5. In a large skillet over medium-high heat, add the drained pork belly and cook until the pieces are crispy, about 10-15 minutes. Stir occasionally to ensure even crisping.
  6. Once crispy, remove the chicharrón from the skillet and set aside.
  7. Warm the corn tortillas in a dry skillet over low heat for about 30 seconds on each side.
  8. Assemble the tacos by placing a portion of crispy chicharrón on each tortilla.
  9. Top with chopped red onion, cilantro, sliced radishes, and drizzle with lime juice and salsa verde.
  10. Serve immediately and enjoy!
