Ingredients

  • Pork belly (halal) - 300 grams
  • Water - 500 ml
  • Lime - 1, juiced
  • Corn tortillas - 4
  • Avocado - 1, sliced
  • Red onion - 1 small, diced
  • Cilantro - 1/4 cup, chopped
  • Tomato - 1 medium, diced
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Vegetable oil - 2 tablespoons

Steps

  1. In a pot, add the pork belly and cover with water. Bring to a boil and then simmer for 30 minutes until tender.
  2. Remove the pork from the pot and let it cool slightly. Once cool enough to handle, chop it into small pieces.
  3. In a pan, heat vegetable oil over medium heat. Add the chopped pork and cook until crispy, about 5-7 minutes, stirring occasionally.
  4. While the pork is cooking, prepare the salsa by mixing diced tomato, red onion, cilantro, lime juice, salt, and black pepper in a bowl.
  5. Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
  6. To assemble the tacos, place a generous amount of crispy chicharrón on each tortilla, top with avocado slices and the salsa mixture.
  7. Serve immediately and enjoy your Tacos de Chicharrón de Cerdo!
