- Chayote - 2 medium
- Olive oil - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Red bell pepper - 1, diced
- Cumin - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Corn tortillas - 4
- Fresh cilantro - for garnish
- Lime - 1, cut into wedges
Steps
- Wash and peel the chayote, then cut it into small cubes.
- In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
- Add the minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until softened.
- Stir in the chayote cubes, cumin, smoked paprika, salt, and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the chayote is tender.
- While the chayote mixture cooks, warm the corn tortillas in a separate skillet over low heat for about 1-2 minutes on each side.
- Once the chayote is cooked, remove from heat and assemble the tacos by placing the chayote mixture onto each tortilla.
- Garnish with fresh cilantro and serve with lime wedges on the side.
