Ingredients

  • Chayote - 2 medium
  • Olive oil - 2 tablespoons
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Red bell pepper - 1, diced
  • Cumin - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Corn tortillas - 4
  • Fresh cilantro - for garnish
  • Lime - 1, cut into wedges

Steps

  1. Wash and peel the chayote, then cut it into small cubes.
  2. In a skillet, heat the olive oil over medium heat. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Add the minced garlic and diced red bell pepper to the skillet, cooking for another 2-3 minutes until softened.
  4. Stir in the chayote cubes, cumin, smoked paprika, salt, and black pepper. Cook for about 10-12 minutes, stirring occasionally, until the chayote is tender.
  5. While the chayote mixture cooks, warm the corn tortillas in a separate skillet over low heat for about 1-2 minutes on each side.
  6. Once the chayote is cooked, remove from heat and assemble the tacos by placing the chayote mixture onto each tortilla.
  7. Garnish with fresh cilantro and serve with lime wedges on the side.
