Ingredients

  • Cauliflower - 300 grams
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Garlic powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Red cabbage - 100 grams, shredded
  • Fresh cilantro - 1/4 cup, chopped
  • Avocado - 1 medium
  • Lime - 1, juiced
  • Salt - to taste

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Cut the cauliflower into small florets and place them in a mixing bowl.
  3. Add olive oil, cumin, paprika, garlic powder, salt, and black pepper to the bowl and toss until the cauliflower is well coated.
  4. Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until golden and tender.
  5. While the cauliflower is roasting, prepare the avocado sauce by mashing the avocado in a small bowl and mixing it with lime juice and salt to taste.
  6. Once the cauliflower is done, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  7. Assemble the tacos by placing a portion of roasted cauliflower on each tortilla, then top with shredded red cabbage, chopped cilantro, and a drizzle of avocado sauce.
