- Cauliflower - 300 grams
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Paprika - 1 teaspoon
- Garlic powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Red cabbage - 100 grams, shredded
- Fresh cilantro - 1/4 cup, chopped
- Avocado - 1 medium
- Lime - 1, juiced
- Salt - to taste
Steps
- Preheat the oven to 200°C (400°F).
- Cut the cauliflower into small florets and place them in a mixing bowl.
- Add olive oil, cumin, paprika, garlic powder, salt, and black pepper to the bowl and toss until the cauliflower is well coated.
- Spread the seasoned cauliflower on a baking sheet in a single layer and roast in the preheated oven for 20 minutes, or until golden and tender.
- While the cauliflower is roasting, prepare the avocado sauce by mashing the avocado in a small bowl and mixing it with lime juice and salt to taste.
- Once the cauliflower is done, warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Assemble the tacos by placing a portion of roasted cauliflower on each tortilla, then top with shredded red cabbage, chopped cilantro, and a drizzle of avocado sauce.
