- Water - 250 ml
- Corn tortillas - 4
- Fresh cilantro - 30 grams, chopped
- Red onion - 50 grams, diced
- Avocado - 1 medium, sliced
- Lime - 1, cut into wedges
Steps
- In a large pot, combine the pork shoulder, lemon juice, minced garlic, cumin, oregano, salt, black pepper, and water.
- Bring the mixture to a boil over medium-high heat, then reduce to low and cover, allowing it to simmer for about 2 hours, or until the pork is tender and easily shredded.
- Remove the pork from the pot and shred it using two forks.
- Increase the heat to medium-high and let the remaining liquid reduce for about 10-15 minutes until it thickens slightly.
- Return the shredded pork to the pot, ensuring it is well coated with the reduced sauce.
- While the pork is finishing, warm the corn tortillas in a dry skillet over medium heat until pliable.
- To assemble the tacos, place a generous portion of carnitas on each tortilla, then top with chopped cilantro, diced red onion, and avocado slices.
- Serve immediately with lime wedges on the side.
