Ingredients

  • Pork shoulder - 500 grams
  • Lemon juice - 30 ml
  • Garlic - 4 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Water - 250 ml
  • Corn tortillas - 4
  • Fresh cilantro - 30 grams, chopped
  • Red onion - 50 grams, diced
  • Avocado - 1 medium, sliced
  • Lime - 1, cut into wedges

Steps

  1. In a large pot, combine the pork shoulder, lemon juice, minced garlic, cumin, oregano, salt, black pepper, and water.
  2. Bring the mixture to a boil over medium-high heat, then reduce to low and cover, allowing it to simmer for about 2 hours, or until the pork is tender and easily shredded.
  3. Remove the pork from the pot and shred it using two forks.
  4. Increase the heat to medium-high and let the remaining liquid reduce for about 10-15 minutes until it thickens slightly.
  5. Return the shredded pork to the pot, ensuring it is well coated with the reduced sauce.
  6. While the pork is finishing, warm the corn tortillas in a dry skillet over medium heat until pliable.
  7. To assemble the tacos, place a generous portion of carnitas on each tortilla, then top with chopped cilantro, diced red onion, and avocado slices.
  8. Serve immediately with lime wedges on the side.
