Steps

  1. In a bowl, mix the shrimp with olive oil, minced garlic, lime juice, cumin, paprika, salt, and black pepper. Let it marinate for 10 minutes.
  2. In a skillet over medium heat, cook the marinated shrimp for 5-7 minutes until they are pink and cooked through, stirring occasionally.
  3. While the shrimp is cooking, prepare the avocado salsa by combining diced avocado, tomato, red onion, cilantro, and jalapeño in a bowl. Squeeze some lime juice over the mixture and gently toss to combine.
  4. Warm the corn tortillas in a dry skillet for about 30 seconds on each side or until pliable.
  5. To assemble, place a few shrimp on each tortilla, top with avocado salsa, and fold the tortillas.
  6. Serve immediately with lime wedges on the side.
