- Beets - 2 medium (about 300g)
- Olive oil - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 small
- Avocado - 1 medium, sliced
- Red onion - 1/4, thinly sliced
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Feta cheese - 50g, crumbled (optional)
- Sour cream or yogurt - 2 tablespoons (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Wash and peel the beets, then cut them into small cubes.
- In a bowl, toss the beet cubes with olive oil, salt, and black pepper until well-coated.
- Spread the beets on a baking sheet lined with parchment paper and roast in the oven for 30-35 minutes, or until tender, stirring halfway through.
- While the beets are roasting, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.
- Once the beets are done, remove them from the oven and let them cool slightly.
- Assemble the tacos by placing a portion of roasted beets on each tortilla, topped with avocado slices, red onion, and cilantro.
- If desired, add crumbled feta cheese and a dollop of sour cream or yogurt.
- Serve with lime wedges on the side for squeezing over the tacos.
