Ingredients

  • Beets - 2 medium (about 300g)
  • Olive oil - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Red onion - 1/4, thinly sliced
  • Cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Feta cheese - 50g, crumbled (optional)
  • Sour cream or yogurt - 2 tablespoons (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Wash and peel the beets, then cut them into small cubes.
  3. In a bowl, toss the beet cubes with olive oil, salt, and black pepper until well-coated.
  4. Spread the beets on a baking sheet lined with parchment paper and roast in the oven for 30-35 minutes, or until tender, stirring halfway through.
  5. While the beets are roasting, warm the corn tortillas in a skillet over medium heat for about 30 seconds on each side, or until pliable.
  6. Once the beets are done, remove them from the oven and let them cool slightly.
  7. Assemble the tacos by placing a portion of roasted beets on each tortilla, topped with avocado slices, red onion, and cilantro.
  8. If desired, add crumbled feta cheese and a dollop of sour cream or yogurt.
  9. Serve with lime wedges on the side for squeezing over the tacos.
