Ingredients
- Beef chuck roast - 500 grams
- Lettuce leaves (for wrapping) - 8 large leaves
- Onion - 1 medium, chopped
- Garlic cloves - 3, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Chipotle powder - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 250 ml
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, juiced
Steps
- In a large pot, heat a bit of oil over medium heat and brown the beef chuck roast on all sides.
- Remove the beef from the pot and add chopped onion and minced garlic, sautéing until translucent.
- Return the beef to the pot and add cumin, oregano, chipotle powder, salt, black pepper, and beef broth.
- Bring the mixture to a boil, then reduce the heat to low, cover, and let simmer for 3-4 hours until the beef is tender and easily shredded.
- Once cooked, shred the beef with two forks and mix with the cooking liquid.
- To assemble, take a lettuce leaf and add a generous amount of shredded barbacoa, top with chopped cilantro and a squeeze of lime juice.
- Serve immediately and enjoy your Paleo-friendly tacos.
