Ingredients

  • Chicken thighs - 400 grams
  • Garlic cloves - 3, minced
  • Onion - 1 medium, chopped
  • Chipotle peppers in adobo sauce - 2, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Salt - 1 teaspoon
  • Lime juice - 2 tablespoons
  • Beef or chicken broth - 250 ml
  • Corn tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Radishes - 4, thinly sliced
  • Avocado - 1, sliced
  • Sour cream - 2 tablespoons

Steps

  1. In a bowl, combine minced garlic, chopped onion, chipotle peppers, cumin, oregano, black pepper, salt, lime juice, and broth to create a marinade.
  2. Add the chicken thighs to the marinade, ensuring they are well coated. Cover and refrigerate for at least 1 hour, or overnight for best results.
  3. Preheat your oven to 160°C (320°F). Place the marinated chicken in a baking dish and cover it tightly with aluminum foil.
  4. Bake the chicken in the preheated oven for about 90 minutes, or until the chicken is tender and easily shreds with a fork.
  5. Remove the chicken from the oven and let it rest for 10 minutes. Then, shred the chicken using two forks.
  6. In a skillet over medium heat, warm the corn tortillas for about 30 seconds on each side until pliable.
  7. Assemble the tacos by placing shredded chicken on each tortilla, and top with chopped cilantro, radishes, avocado slices, and a drizzle of sour cream.
  8. Serve immediately and enjoy your Tacos de Barbacoa de Pollo!
