- Goat meat (shoulder or leg) - 500 grams
- Lime juice - 30 ml
- Garlic - 3 cloves, minced
- Onion - 1 medium, chopped
- Cilantro - 30 grams, chopped
- Bay leaves - 2
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chipotle pepper in adobo - 1, minced
- Corn tortillas - 4
- Radishes - 100 grams, thinly sliced
- Avocado - 1, sliced
- Salsa verde - 60 ml
Steps
- In a large bowl, combine the goat meat with lime juice, garlic, cumin, oregano, salt, black pepper, and minced chipotle. Mix well and marinate for at least 2 hours, preferably overnight in the refrigerator.
- In a large pot, heat a little oil over medium heat. Add the chopped onion and sauté until translucent.
- Add the marinated goat meat to the pot along with the bay leaves. Pour in enough water to cover the meat (about 500 ml). Bring to a boil, then reduce to a simmer.
- Cover the pot and let the meat cook for about 3 hours, or until it is tender and easily shreds with a fork. Check occasionally and add more water if necessary to prevent drying out.
- Once cooked, remove the goat meat from the pot and shred it using two forks. Discard bay leaves.
- Warm the corn tortillas on a skillet or directly over a flame until soft and pliable.
- To assemble, place a generous amount of shredded goat meat on each tortilla. Top with chopped cilantro, sliced radishes, avocado, and a drizzle of salsa verde.
