Ingredients

  • Goat meat (shoulder or leg) - 500 grams
  • Lime juice - 30 ml
  • Garlic - 3 cloves, minced
  • Onion - 1 medium, chopped
  • Cilantro - 30 grams, chopped
  • Bay leaves - 2
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chipotle pepper in adobo - 1, minced
  • Corn tortillas - 4
  • Radishes - 100 grams, thinly sliced
  • Avocado - 1, sliced
  • Salsa verde - 60 ml

Steps

  1. In a large bowl, combine the goat meat with lime juice, garlic, cumin, oregano, salt, black pepper, and minced chipotle. Mix well and marinate for at least 2 hours, preferably overnight in the refrigerator.
  2. In a large pot, heat a little oil over medium heat. Add the chopped onion and sauté until translucent.
  3. Add the marinated goat meat to the pot along with the bay leaves. Pour in enough water to cover the meat (about 500 ml). Bring to a boil, then reduce to a simmer.
  4. Cover the pot and let the meat cook for about 3 hours, or until it is tender and easily shreds with a fork. Check occasionally and add more water if necessary to prevent drying out.
  5. Once cooked, remove the goat meat from the pot and shred it using two forks. Discard bay leaves.
  6. Warm the corn tortillas on a skillet or directly over a flame until soft and pliable.
  7. To assemble, place a generous amount of shredded goat meat on each tortilla. Top with chopped cilantro, sliced radishes, avocado, and a drizzle of salsa verde.
  8. Serve immediately and enjoy your authentic Tacos de Barbacoa de Cabra!
