Ingredients

  • beef chuck roast - 500 grams
  • onion - 1 medium, chopped
  • garlic - 4 cloves, minced
  • chipotle in adobo sauce - 2 tablespoons
  • cumin - 1 teaspoon
  • oregano - 1 teaspoon
  • salt - 1 teaspoon
  • black pepper - 1/2 teaspoon
  • beef broth - 250 ml
  • corn tortillas - 4
  • fresh cilantro - 1/4 cup, chopped
  • lime - 1, cut into wedges

Steps

  1. In a large pot, combine the chopped onion, minced garlic, chipotle in adobo, cumin, oregano, salt, and black pepper.
  2. Add the beef chuck roast and pour the beef broth over it. Make sure the beef is well-coated with the spice mixture.
  3. Cover the pot and cook on low heat for about 3 hours, or until the beef is tender and easily shredded.
  4. Once cooked, remove the beef from the pot and shred it with two forks.
  5. Return the shredded beef to the pot to soak up the remaining juices for about 10 minutes.
  6. While the beef is soaking, warm the corn tortillas in a dry skillet for about 30 seconds on each side.
  7. To serve, fill each tortilla with the shredded barbacoa, top with fresh cilantro, and serve with lime wedges on the side.
