Ingredients
- beef chuck roast - 500 grams
- onion - 1 medium, chopped
- garlic - 4 cloves, minced
- chipotle in adobo sauce - 2 tablespoons
- cumin - 1 teaspoon
- oregano - 1 teaspoon
- salt - 1 teaspoon
- black pepper - 1/2 teaspoon
- beef broth - 250 ml
- corn tortillas - 4
- fresh cilantro - 1/4 cup, chopped
- lime - 1, cut into wedges
Steps
- In a large pot, combine the chopped onion, minced garlic, chipotle in adobo, cumin, oregano, salt, and black pepper.
- Add the beef chuck roast and pour the beef broth over it. Make sure the beef is well-coated with the spice mixture.
- Cover the pot and cook on low heat for about 3 hours, or until the beef is tender and easily shredded.
- Once cooked, remove the beef from the pot and shred it with two forks.
- Return the shredded beef to the pot to soak up the remaining juices for about 10 minutes.
- While the beef is soaking, warm the corn tortillas in a dry skillet for about 30 seconds on each side.
- To serve, fill each tortilla with the shredded barbacoa, top with fresh cilantro, and serve with lime wedges on the side.
