  • Avocado - 1 medium, diced
  • Lime - 1, juiced
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Olive oil - 1 tablespoon

Steps

  1. In a bowl, combine the finely chopped celery, black beans, red onion, cilantro, diced avocado, lime juice, minced garlic, cumin, salt, and pepper. Mix well to combine all the flavors.
  2. Heat the olive oil in a skillet over medium heat. Warm the corn tortillas for about 30 seconds on each side until pliable.
  3. Remove the tortillas from the skillet and fill each with the celery and black bean mixture.
