  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Low-carb tortillas - 4
  • Red onion - 50 grams, thinly sliced
  • Radishes - 50 grams, thinly sliced

Steps

  1. In a bowl, combine minced garlic, chipotle pepper, cumin, oregano, lime juice, and olive oil to create a marinade.
  2. Cut the pork tenderloin into thin strips and add to the marinade, mixing well. Cover and let marinate for at least 15 minutes.
  3. Heat a skillet over medium-high heat and add the marinated pork strips, cooking for about 10-12 minutes or until fully cooked and slightly charred.
  4. While the pork is cooking, prepare the toppings by mixing diced pineapple, chopped cilantro, sliced red onion, and radishes in a separate bowl.
