Ingredients

  • Whole wheat pizza dough - 200 grams
  • Black beans (cooked and drained) - 150 grams
  • Corn kernels - 100 grams
  • Cherry tomatoes (halved) - 100 grams
  • Red onion (finely chopped) - 50 grams
  • Bell pepper (diced) - 100 grams
  • Avocado - 1 medium
  • Lime juice - 2 tablespoons
  • Cilantro (chopped) - 2 tablespoons
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Roll out the whole wheat pizza dough on a lightly floured surface to your desired thickness.
  3. Transfer the rolled-out dough to a baking sheet lined with parchment paper.
  4. In a mixing bowl, combine the black beans, corn, cherry tomatoes, red onion, bell pepper, ground cumin, chili powder, and salt. Mix well.
  5. Spread the bean and vegetable mixture evenly over the pizza dough.
  6. Bake the pizza in the preheated oven for 15-20 minutes, or until the crust is golden brown.
  7. While the pizza is baking, prepare the avocado sauce by blending the avocado, lime juice, cilantro, and a pinch of salt until smooth.
  8. Once the pizza is done baking, remove it from the oven and drizzle the avocado sauce over the top.
