- Red bell pepper - 100 grams
- Yellow bell pepper - 100 grams
- Portobello mushroom - 100 grams
- Olive oil - 2 tablespoons
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Corn tortillas - 4 pieces
- Avocado - 1 medium
- Lime - 1 unit
- Fresh cilantro - 2 tablespoons, chopped
Steps
- Preheat the grill or a grill pan over medium heat.
- Slice the zucchini, red and yellow bell peppers, and portobello mushroom into thick strips.
- In a bowl, combine the olive oil, cumin, chili powder, salt, and black pepper. Add the sliced vegetables and toss to coat evenly.
- Place the seasoned vegetables on the grill and cook for about 5-7 minutes on each side, or until tender and slightly charred.
- While the vegetables are grilling, prepare the avocado crema. In a bowl, mash the avocado and mix in the juice of half a lime, salt, and chopped cilantro until smooth.
- Once the vegetables are done, warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing a generous amount of grilled vegetables on each tortilla, followed by a dollop of avocado crema and a sprinkle of fresh cilantro.
- Serve immediately with lime wedges on the side.
