- Zucchini - 100 grams, grated
- Carrot - 100 grams, grated
- Red bell pepper - 50 grams, finely chopped
- Black beans - 100 grams, cooked and drained
- Corn - 50 grams, cooked
- Cilantro - 2 tablespoons, chopped
- Cumin powder - 1 teaspoon
- Chili powder - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Olive oil - 2 tablespoons
- Corn flour - 50 grams
- Egg - 1, beaten
- Tortillas - 2 medium
- Avocado - 1, sliced
- Lime - 1, cut into wedges
Steps
- In a large bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, black beans, corn, and chopped cilantro.
- Add cumin powder, chili powder, salt, and mix well.
- In a separate bowl, mix the corn flour and beaten egg, then add to the vegetable mixture and stir until combined.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
- Form the vegetable mixture into two patties and cook in the skillet for about 4-5 minutes on each side until golden brown.
- While the patties are cooking, warm the tortillas in another skillet for about 1 minute on each side.
- Once patties are done, assemble the tacos by placing a patty on each tortilla, topping with avocado slices, and squeezing lime juice over the top.
- Serve immediately with extra lime wedges on the side.
