Ingredients

  • Zucchini - 100 grams, grated
  • Carrot - 100 grams, grated
  • Red bell pepper - 50 grams, finely chopped
  • Black beans - 100 grams, cooked and drained
  • Corn - 50 grams, cooked
  • Cilantro - 2 tablespoons, chopped
  • Cumin powder - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Olive oil - 2 tablespoons
  • Corn flour - 50 grams
  • Egg - 1, beaten
  • Tortillas - 2 medium
  • Avocado - 1, sliced
  • Lime - 1, cut into wedges

Steps

  1. In a large bowl, combine the grated zucchini, grated carrot, chopped red bell pepper, black beans, corn, and chopped cilantro.
  2. Add cumin powder, chili powder, salt, and mix well.
  3. In a separate bowl, mix the corn flour and beaten egg, then add to the vegetable mixture and stir until combined.
  4. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat.
  5. Form the vegetable mixture into two patties and cook in the skillet for about 4-5 minutes on each side until golden brown.
  6. While the patties are cooking, warm the tortillas in another skillet for about 1 minute on each side.
  7. Once patties are done, assemble the tacos by placing a patty on each tortilla, topping with avocado slices, and squeezing lime juice over the top.
  8. Serve immediately with extra lime wedges on the side.
