Ingredients

  • Chicken breast - 300 grams
  • Olive oil - 1 tablespoon
  • Onion - 1 medium, sliced
  • Garlic - 2 cloves, minced
  • Smoked paprika - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Tomato sauce - 200 grams
  • Chipotle peppers in adobo sauce - 1 tablespoon, chopped
  • Lettuce leaves - 4 large (for wraps)
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime - 1, cut into wedges

Steps

  1. In a skillet, heat olive oil over medium heat and sauté the sliced onion until translucent, about 5 minutes.
  2. Add minced garlic, smoked paprika, and chili powder to the skillet, stirring for another minute until fragrant.
  3. Add the chicken breast to the skillet, followed by the tomato sauce and chipotle peppers. Stir well to combine.
  4. Cover and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
  5. Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and mix well with the sauce.
  6. To serve, place a generous amount of the tinga mixture on a lettuce leaf, top with chopped cilantro, and squeeze fresh lime juice over it.
