Ingredients
- Chicken breast - 300 grams
- Olive oil - 1 tablespoon
- Onion - 1 medium, sliced
- Garlic - 2 cloves, minced
- Smoked paprika - 1 teaspoon
- Chili powder - 1 teaspoon
- Tomato sauce - 200 grams
- Chipotle peppers in adobo sauce - 1 tablespoon, chopped
- Lettuce leaves - 4 large (for wraps)
- Fresh cilantro - 2 tablespoons, chopped
- Lime - 1, cut into wedges
Steps
- In a skillet, heat olive oil over medium heat and sauté the sliced onion until translucent, about 5 minutes.
- Add minced garlic, smoked paprika, and chili powder to the skillet, stirring for another minute until fragrant.
- Add the chicken breast to the skillet, followed by the tomato sauce and chipotle peppers. Stir well to combine.
- Cover and simmer for 15-20 minutes, or until the chicken is cooked through and tender.
- Remove the chicken from the skillet and shred it using two forks. Return the shredded chicken to the skillet and mix well with the sauce.
- To serve, place a generous amount of the tinga mixture on a lettuce leaf, top with chopped cilantro, and squeeze fresh lime juice over it.
