- Tempeh - 200 grams
- Corn tortillas - 4 pieces
- Olive oil - 2 tablespoons
- Red onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Smoked paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1 medium, sliced
- Lime - 1, cut into wedges
- Salsa - 100 grams (optional)
Steps
- Steam the tempeh for 10 minutes to soften it, then let it cool slightly before crumbling it into a bowl.
- In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the diced red onion and sauté for 3-4 minutes until translucent.
- Add the minced garlic, cumin, chili powder, smoked paprika, salt, and black pepper to the skillet. Sauté for another 2 minutes until fragrant.
- Stir in the crumbled tempeh and cook for about 5-7 minutes, stirring occasionally, until the tempeh is heated through and slightly crispy.
- Remove from heat and mix in the chopped cilantro.
- Warm the corn tortillas in a dry skillet for about 30 seconds on each side until pliable.
- Assemble the tacos by placing a generous amount of the tempeh mixture in the center of each tortilla. Top with avocado slices and serve with lime wedges and salsa on the side.
