- Corn tortillas - 4 small
- Avocado - 1 medium, sliced
- Cilantro - a small handful, chopped
- Lime - 1, juiced
- Red onion - 1/4, thinly sliced
- Salsa - 100 grams, for serving
Steps
- Preheat the grill or a pan over medium heat.
- Clean the Portobello mushrooms and remove the stems, then slice them into thick strips.
- In a bowl, combine olive oil, minced garlic, cumin, smoked paprika, salt, and black pepper. Mix well.
- Add the sliced mushrooms to the bowl and toss until they are evenly coated with the marinade. Let them marinate for about 10 minutes.
- While the mushrooms marinate, prepare the toppings: slice the avocado, chop the cilantro, and thinly slice the red onion.
- Grill the marinated mushrooms for about 5-7 minutes on each side, or until they are tender and slightly charred.
- Warm the corn tortillas on the grill or in a dry skillet for about 30 seconds on each side.
- Assemble the tacos by placing a portion of grilled mushrooms in each tortilla, then top with avocado slices, chopped cilantro, and red onion.
- Drizzle lime juice over the tacos and serve with salsa on the side.
