- Corn tortillas - 4 small
- Avocado - 1 medium, sliced
- Red onion - 1/2 small, thinly sliced
- Fresh cilantro - 1/4 cup, chopped
- Sour cream or Greek yogurt - 2 tablespoons
- Feta cheese or queso fresco - 30 grams, crumbled (optional)
Steps
- Preheat the grill or a stovetop grill pan over medium heat.
- In a small bowl, mix together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create a marinade.
- Clean the portobello mushrooms and remove the stems. Brush both sides of the mushrooms with the marinade.
- Grill the portobello mushrooms for about 5-7 minutes on each side, or until tender and grill marks appear.
- While the mushrooms are grilling, warm the corn tortillas on a skillet for about 30 seconds on each side until pliable.
- Once the mushrooms are cooked, slice them into strips.
- Assemble the tacos by placing a portion of the grilled portobello strips on each tortilla.
