  • Corn tortillas - 4 small
  • Avocado - 1 medium, sliced
  • Red onion - 1/2 small, thinly sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Sour cream or Greek yogurt - 2 tablespoons
  • Feta cheese or queso fresco - 30 grams, crumbled (optional)

Steps

  1. Preheat the grill or a stovetop grill pan over medium heat.
  2. In a small bowl, mix together olive oil, lime juice, minced garlic, cumin, chili powder, salt, and black pepper to create a marinade.
  3. Clean the portobello mushrooms and remove the stems. Brush both sides of the mushrooms with the marinade.
  4. Grill the portobello mushrooms for about 5-7 minutes on each side, or until tender and grill marks appear.
  5. While the mushrooms are grilling, warm the corn tortillas on a skillet for about 30 seconds on each side until pliable.
  6. Once the mushrooms are cooked, slice them into strips.
