- Pineapple - 100 grams, diced
- Corn tortillas - 4 pieces
- Onion - 1 small, finely chopped
- Cilantro - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Chipotle pepper in adobo sauce - 1 teaspoon
- Lime - 1, juiced
- Olive oil - 1 tablespoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
Steps
- In a bowl, combine minced garlic, chipotle pepper, lime juice, olive oil, salt, and pepper to create a marinade.
- Cut the chicken breast into thin strips and add it to the marinade, ensuring it's well-coated. Let it marinate for at least 15 minutes.
- Preheat a grill or skillet over medium-high heat. Cook the marinated chicken strips for about 6-8 minutes, or until fully cooked and slightly charred.
- Add the diced pineapple to the grill in the last 2 minutes of cooking to caramelize it slightly.
- Warm the corn tortillas on the grill for about 30 seconds on each side.
- Assemble the tacos by placing cooked chicken and pineapple on each tortilla, and topping with chopped onion and cilantro.
- Serve with additional lime wedges on the side.
