Ingredients

  • Chicken breast - 300 grams
  • Pineapple - 100 grams, diced
  • Corn tortillas - 4 pieces
  • Onion - 1 small, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Garlic - 2 cloves, minced
  • Chipotle pepper in adobo sauce - 1 teaspoon
  • Lime - 1, juiced
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon

Steps

  1. In a bowl, combine minced garlic, chipotle pepper, lime juice, olive oil, salt, and pepper to create a marinade.
  2. Cut the chicken breast into thin strips and add it to the marinade, ensuring it's well-coated. Let it marinate for at least 15 minutes.
  3. Preheat a grill or skillet over medium-high heat. Cook the marinated chicken strips for about 6-8 minutes, or until fully cooked and slightly charred.
  4. Add the diced pineapple to the grill in the last 2 minutes of cooking to caramelize it slightly.
  5. Warm the corn tortillas on the grill for about 30 seconds on each side.
  6. Assemble the tacos by placing cooked chicken and pineapple on each tortilla, and topping with chopped onion and cilantro.
  7. Serve with additional lime wedges on the side.
