Ingredients
- Chicken breast - 300 grams
- Olive oil - 1 tablespoon
- Garlic powder - 1 teaspoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Corn tortillas - 4 (2 per serving)
- Avocado - 1 medium
- Greek yogurt - 2 tablespoons
- Lime juice - 1 tablespoon
- Cilantro - 2 tablespoons, chopped
- Tomato - 1 medium, diced
- Red onion - 1/4, finely chopped
- Lettuce - 1 cup, shredded
Steps
- In a bowl, mix the olive oil, garlic powder, cumin, paprika, salt, and black pepper. Add the chicken breast and coat well with the marinade. Let it sit for 10 minutes.
- Preheat a grill or skillet over medium-high heat. Grill the marinated chicken for about 6-7 minutes on each side, or until fully cooked and juices run clear. Remove from heat and let it rest for a few minutes before slicing.
- While the chicken is resting, prepare the avocado sauce by blending the avocado, Greek yogurt, lime juice, and half of the chopped cilantro in a food processor until smooth. Season with salt to taste.
- Warm the corn tortillas on the grill or in a pan for about 30 seconds on each side until pliable.
- To assemble the tacos, place a portion of sliced chicken on each tortilla. Top with diced tomato, red onion, shredded lettuce, and a drizzle of the avocado sauce. Garnish with the remaining cilantro.
- Serve immediately and enjoy your Taco de Pollo!
