Ingredients

  • Beef tongue - 400 grams
  • Corn tortillas - 4
  • Red onion - 1 small, finely chopped
  • Cilantro - 1/4 cup, chopped
  • Avocado - 1, sliced
  • Lime - 1, cut into wedges
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cumin - 1/2 teaspoon
  • Cooking oil - 1 tablespoon
  • Chipotle sauce - 2 tablespoons (optional)

Steps

  1. Rinse the beef tongue under cold water and place it in a large pot. Cover it with water and add salt, black pepper, and cumin. Bring to a boil, then reduce heat to low and simmer for 2-3 hours until tender.
  2. Remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and slice the tongue thinly.
  3. In a skillet, heat the cooking oil over medium heat. Add the sliced tongue and sear for about 5 minutes until warmed through and slightly crispy.
  4. Warm the corn tortillas in another skillet or directly over the flame until pliable.
  5. Assemble the tacos by placing a portion of the seared tongue on each tortilla. Top with chopped red onion, cilantro, and avocado slices. Drizzle with chipotle sauce if desired.
  6. Serve with lime wedges on the side for squeezing over the tacos.
