- Beef tongue - 400 grams
- Corn tortillas - 4
- Red onion - 1 small, finely chopped
- Cilantro - 1/4 cup, chopped
- Avocado - 1, sliced
- Lime - 1, cut into wedges
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cumin - 1/2 teaspoon
- Cooking oil - 1 tablespoon
- Chipotle sauce - 2 tablespoons (optional)
Steps
- Rinse the beef tongue under cold water and place it in a large pot. Cover it with water and add salt, black pepper, and cumin. Bring to a boil, then reduce heat to low and simmer for 2-3 hours until tender.
- Remove the tongue from the pot and let it cool slightly. Peel off the tough outer skin and slice the tongue thinly.
- In a skillet, heat the cooking oil over medium heat. Add the sliced tongue and sear for about 5 minutes until warmed through and slightly crispy.
- Warm the corn tortillas in another skillet or directly over the flame until pliable.
- Assemble the tacos by placing a portion of the seared tongue on each tortilla. Top with chopped red onion, cilantro, and avocado slices. Drizzle with chipotle sauce if desired.
- Serve with lime wedges on the side for squeezing over the tacos.
