Ingredients

  • Huitlacoche - 200 grams
  • Ground turkey - 250 grams
  • Red onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 20 grams, chopped
  • Lime juice - 1 tablespoon
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Pepper - 1/4 teaspoon
  • Avocado - 1 medium, sliced
  • Romaine lettuce leaves - 4 large (for wrapping)
  • Olive oil - 1 tablespoon

Steps

  1. In a skillet, heat olive oil over medium heat, then add the chopped red onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic and sauté for an additional 1 minute until fragrant.
  3. In a bowl, combine the ground turkey, sautéed onion and garlic, huitlacoche, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix until well combined.
  4. Form the mixture into two patties.
  5. In the same skillet, cook the patties over medium heat for about 5-7 minutes on each side, or until fully cooked through and browned.
  6. Once cooked, remove patties from the skillet and let them rest for a few minutes.
  7. To assemble, take a large romaine lettuce leaf, place a turkey-huitlacoche patty in the center, top with avocado slices, and wrap it like a taco.
