Ingredients
- Huitlacoche - 200 grams
- Ground turkey - 250 grams
- Red onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Cilantro - 20 grams, chopped
- Lime juice - 1 tablespoon
- Cumin - 1 teaspoon
- Paprika - 1 teaspoon
- Salt - 1/2 teaspoon
- Pepper - 1/4 teaspoon
- Avocado - 1 medium, sliced
- Romaine lettuce leaves - 4 large (for wrapping)
- Olive oil - 1 tablespoon
Steps
- In a skillet, heat olive oil over medium heat, then add the chopped red onion and sauté until translucent, about 5 minutes.
- Add minced garlic and sauté for an additional 1 minute until fragrant.
- In a bowl, combine the ground turkey, sautéed onion and garlic, huitlacoche, cilantro, lime juice, cumin, paprika, salt, and pepper. Mix until well combined.
- Form the mixture into two patties.
- In the same skillet, cook the patties over medium heat for about 5-7 minutes on each side, or until fully cooked through and browned.
- Once cooked, remove patties from the skillet and let them rest for a few minutes.
- To assemble, take a large romaine lettuce leaf, place a turkey-huitlacoche patty in the center, top with avocado slices, and wrap it like a taco.
