Ingredients

  • Fresh corn kernels - 200 grams
  • Black beans - 100 grams, cooked and drained
  • Cornmeal - 50 grams
  • Cilantro - 15 grams, chopped
  • Red onion - 30 grams, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1/2 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Egg - 1, beaten (or flax egg for vegan option)
  • Olive oil - 2 tablespoons
  • Corn tortillas - 2
  • Avocado - 1, sliced
  • Lime - 1, cut into wedges
  • Sour cream or vegan yogurt - 2 tablespoons (optional)

Steps

  1. In a large bowl, combine the fresh corn kernels, black beans, cornmeal, cilantro, red onion, garlic, cumin, chili powder, salt, and black pepper.
  2. Mash the mixture with a fork or potato masher until it holds together but still has some texture.
  3. Add the beaten egg (or flax egg) to the mixture and stir until fully incorporated.
  4. Form the mixture into two patties, about 1.5 cm thick.
  5. Heat 1 tablespoon of olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until golden brown and crispy.
  6. While the patties are cooking, warm the corn tortillas in a separate skillet for about 30 seconds on each side.
  7. Assemble the tacos by placing a corn patty on each tortilla, adding sliced avocado, and drizzling with sour cream or vegan yogurt if desired.
  8. Serve with lime wedges on the side for an extra burst of flavor.
