- Pork shoulder - 400 grams
- Orange juice - 100 ml
- Lime juice - 30 ml
- Garlic - 4 cloves, minced
- Ground cumin - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Banana leaves or aluminum foil - for wrapping
- Corn tortillas - 4 pieces
- Red onion - 1 small, thinly sliced
- Cilantro - a handful, chopped
- Avocado - 1 medium, sliced
- Salsa verde - to taste
Steps
- Preheat your oven to 150°C (300°F).
- In a bowl, mix the orange juice, lime juice, minced garlic, ground cumin, oregano, salt, and black pepper.
- Cut the pork shoulder into large chunks and marinate in the citrus mixture for at least 30 minutes.
- Wrap the marinated pork in banana leaves or aluminum foil and place it in a baking dish.
- Cover the dish tightly with foil and bake in the preheated oven for 3 hours until the pork is tender.
- Once cooked, shred the pork using two forks and mix it with the juices from the wrapping.
- Warm the corn tortillas on a skillet for about 30 seconds on each side.
- Assemble the tacos by placing a generous amount of cochinita on each tortilla, then top with sliced red onion, cilantro, avocado, and salsa verde.
