Ingredients

  • Pork shoulder - 400 grams
  • Orange juice - 100 ml
  • Lime juice - 30 ml
  • Garlic - 4 cloves, minced
  • Ground cumin - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Banana leaves or aluminum foil - for wrapping
  • Corn tortillas - 4 pieces
  • Red onion - 1 small, thinly sliced
  • Cilantro - a handful, chopped
  • Avocado - 1 medium, sliced
  • Salsa verde - to taste

Steps

  1. Preheat your oven to 150°C (300°F).
  2. In a bowl, mix the orange juice, lime juice, minced garlic, ground cumin, oregano, salt, and black pepper.
  3. Cut the pork shoulder into large chunks and marinate in the citrus mixture for at least 30 minutes.
  4. Wrap the marinated pork in banana leaves or aluminum foil and place it in a baking dish.
  5. Cover the dish tightly with foil and bake in the preheated oven for 3 hours until the pork is tender.
  6. Once cooked, shred the pork using two forks and mix it with the juices from the wrapping.
  7. Warm the corn tortillas on a skillet for about 30 seconds on each side.
  8. Assemble the tacos by placing a generous amount of cochinita on each tortilla, then top with sliced red onion, cilantro, avocado, and salsa verde.
  9. Serve immediately and enjoy your high-protein Taco de Cochinita.
