- Black pepper - 1/4 teaspoon
- Chickpea flour - 2 tablespoons
- Fresh cilantro - 2 tablespoons, chopped
- Corn tortillas - 2 large
- Avocado - 1 small, sliced
- Lime - 1, cut into wedges
Steps
- Heat olive oil in a skillet over medium heat and sauté the diced red onion for 3-4 minutes until translucent.
- Add the minced garlic and chopped mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are tender and their moisture has evaporated.
- Stir in cumin, paprika, salt, and black pepper, mixing well to combine the flavors. Cook for 2 more minutes.
- Sprinkle the chickpea flour over the mushroom mixture and stir until well combined. Cook for another 2-3 minutes until the mixture thickens.
- Remove from heat and fold in the chopped cilantro.
- Warm the corn tortillas in a separate skillet or directly over a flame for a few seconds on each side until pliable.
- Assemble the tacos by placing a generous spoonful of the mushroom mixture onto each tortilla, adding slices of avocado on top.
- Serve with lime wedges on the side for an extra zesty touch.
