  • Cumin powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chickpea flour - 2 tablespoons
  • Fresh cilantro - 2 tablespoons, chopped
  • Corn tortillas - 2 large
  • Avocado - 1 small, sliced
  • Lime - 1, cut into wedges

Steps

  1. Heat olive oil in a skillet over medium heat and sauté the diced red onion for 3-4 minutes until translucent.
  2. Add the minced garlic and chopped mushrooms to the skillet, cooking for another 5-7 minutes until the mushrooms are tender and their moisture has evaporated.
  3. Stir in cumin, paprika, salt, and black pepper, mixing well to combine the flavors. Cook for 2 more minutes.
  4. Sprinkle the chickpea flour over the mushroom mixture and stir until well combined. Cook for another 2-3 minutes until the mixture thickens.
  5. Remove from heat and fold in the chopped cilantro.
  6. Warm the corn tortillas in a separate skillet or directly over a flame for a few seconds on each side until pliable.
  7. Assemble the tacos by placing a generous spoonful of the mushroom mixture onto each tortilla, adding slices of avocado on top.
  8. Serve with lime wedges on the side for an extra zesty touch.
