Ingredients
- Pork shoulder - 400 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Chicken broth - 250 milliliters
- Corn tortillas - 4 small
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Avocado - 1 medium, sliced
- Radishes - 4, thinly sliced
Steps
- Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
- Add minced garlic, cumin, oregano, salt, and black pepper to the pot and cook for another minute until fragrant.
- Cut the pork shoulder into large chunks and add it to the pot, searing on all sides until browned, about 8-10 minutes.
- Pour in the chicken broth, ensuring the pork is mostly submerged. Bring to a simmer, then cover and reduce heat to low.
- Cook the pork for 2 hours, or until it is tender and easily shredded with a fork.
- Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and mix it with the cooking liquid.
- Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
- Assemble the tacos by placing a generous amount of carnitas in each tortilla. Top with fresh cilantro, avocado slices, and radish.
- Serve with lime wedges on the side for squeezing over the tacos.
