Ingredients

  • Pork shoulder - 400 grams
  • Olive oil - 2 tablespoons
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Chicken broth - 250 milliliters
  • Corn tortillas - 4 small
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1 medium, sliced
  • Radishes - 4, thinly sliced

Steps

  1. Heat olive oil in a large pot over medium heat. Add the diced onion and sauté until translucent, about 5 minutes.
  2. Add minced garlic, cumin, oregano, salt, and black pepper to the pot and cook for another minute until fragrant.
  3. Cut the pork shoulder into large chunks and add it to the pot, searing on all sides until browned, about 8-10 minutes.
  4. Pour in the chicken broth, ensuring the pork is mostly submerged. Bring to a simmer, then cover and reduce heat to low.
  5. Cook the pork for 2 hours, or until it is tender and easily shredded with a fork.
  6. Remove the pork from the pot and shred it using two forks. Return the shredded pork to the pot and mix it with the cooking liquid.
  7. Warm the corn tortillas in a dry skillet over medium heat for about 30 seconds on each side.
  8. Assemble the tacos by placing a generous amount of carnitas in each tortilla. Top with fresh cilantro, avocado slices, and radish.
  9. Serve with lime wedges on the side for squeezing over the tacos.
