Ingredients

  • Beef brisket - 300 grams
  • Yellow onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Chipotle pepper in adobo - 1, chopped
  • Cumin - 1 teaspoon
  • Oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Beef broth - 250 ml
  • Corn tortillas - 4
  • Fresh cilantro - 1/4 cup, chopped
  • Lime - 1, cut into wedges
  • Avocado - 1, sliced

Steps

  1. In a large pot, heat a little oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
  2. Add the minced garlic, chopped chipotle pepper, cumin, oregano, salt, and black pepper to the pot; stir for 1-2 minutes until fragrant.
  3. Add the beef brisket to the pot, followed by the beef broth. Bring to a boil, then reduce heat to low and cover.
  4. Simmer for about 2 hours, or until the beef is tender and easily shredded with a fork.
  5. Once cooked, remove the brisket and shred it with two forks. Return the shredded beef to the pot and mix well with the juices.
  6. While the beef is resting, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side.
  7. Assemble the tacos by placing a generous amount of barbacoa on each tortilla, then top with fresh cilantro, avocado slices, and a squeeze of lime juice.
