- Beef brisket - 300 grams
- Yellow onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Chipotle pepper in adobo - 1, chopped
- Cumin - 1 teaspoon
- Oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Beef broth - 250 ml
- Corn tortillas - 4
- Fresh cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Avocado - 1, sliced
Steps
- In a large pot, heat a little oil over medium heat and sauté the diced onion until translucent, about 5 minutes.
- Add the minced garlic, chopped chipotle pepper, cumin, oregano, salt, and black pepper to the pot; stir for 1-2 minutes until fragrant.
- Add the beef brisket to the pot, followed by the beef broth. Bring to a boil, then reduce heat to low and cover.
- Simmer for about 2 hours, or until the beef is tender and easily shredded with a fork.
- Once cooked, remove the brisket and shred it with two forks. Return the shredded beef to the pot and mix well with the juices.
- While the beef is resting, warm the corn tortillas on a dry skillet over medium heat for about 30 seconds on each side.
- Assemble the tacos by placing a generous amount of barbacoa on each tortilla, then top with fresh cilantro, avocado slices, and a squeeze of lime juice.
