Ingredients

  • Cauliflower - 300 grams
  • Shredded mozzarella cheese - 150 grams
  • Parmesan cheese, grated - 50 grams
  • Egg - 1 large
  • Ground cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Ground beef - 200 grams
  • Olive oil - 1 tablespoon
  • Onion, diced - 1/2 medium
  • Garlic, minced - 2 cloves
  • Tomato sauce - 100 grams
  • Shredded lettuce - 50 grams
  • Sour cream - 50 grams
  • Chopped cilantro - 2 tablespoons
  • Sliced jalapeños - 30 grams

Steps

  1. Preheat the oven to 220°C (425°F).
  2. Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool slightly.
  3. In a food processor, pulse the cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
  4. In a mixing bowl, combine the cauliflower rice, mozzarella cheese, Parmesan cheese, egg, cumin, chili powder, and salt. Mix until well combined.
  5. Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1 cm thick.
  6. Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
  7. While the crust is baking, heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
  8. Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary. Stir in the tomato sauce and simmer for 5 minutes.
  9. Remove the crust from the oven and spread the beef mixture evenly on top.
  10. Return the pizza to the oven for an additional 10 minutes.
  11. Once baked, garnish with shredded lettuce, sour cream, chopped cilantro, and sliced jalapeños before serving.
