Ingredients
- Cauliflower - 300 grams
- Shredded mozzarella cheese - 150 grams
- Parmesan cheese, grated - 50 grams
- Egg - 1 large
- Ground cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Ground beef - 200 grams
- Olive oil - 1 tablespoon
- Onion, diced - 1/2 medium
- Garlic, minced - 2 cloves
- Tomato sauce - 100 grams
- Shredded lettuce - 50 grams
- Sour cream - 50 grams
- Chopped cilantro - 2 tablespoons
- Sliced jalapeños - 30 grams
Steps
- Preheat the oven to 220°C (425°F).
- Steam the cauliflower florets until tender, about 10 minutes, then drain and let cool slightly.
- In a food processor, pulse the cauliflower until it resembles rice. Transfer to a clean kitchen towel and squeeze out excess moisture.
- In a mixing bowl, combine the cauliflower rice, mozzarella cheese, Parmesan cheese, egg, cumin, chili powder, and salt. Mix until well combined.
- Spread the cauliflower mixture onto a baking sheet lined with parchment paper, forming a round pizza crust about 1 cm thick.
- Bake the crust in the preheated oven for 15-20 minutes, or until golden brown and firm.
- While the crust is baking, heat olive oil in a skillet over medium heat. Add the diced onion and minced garlic, sautéing until soft and fragrant.
- Add the ground beef to the skillet, cooking until browned. Drain excess fat if necessary. Stir in the tomato sauce and simmer for 5 minutes.
- Remove the crust from the oven and spread the beef mixture evenly on top.
- Return the pizza to the oven for an additional 10 minutes.
- Once baked, garnish with shredded lettuce, sour cream, chopped cilantro, and sliced jalapeños before serving.
