Ingredients

  • ripe avocados - 2 medium
  • black beans - 1 cup, cooked and drained
  • red onion - 1/2 small, finely chopped
  • jalapeño - 1 small, finely chopped (optional)
  • cilantro - 1/4 cup, chopped
  • lime juice - 2 tablespoons
  • cumin - 1 teaspoon
  • salt - 1/2 teaspoon
  • tortillas - 4 small (corn or flour)
  • lettuce - 1 cup, shredded
  • tomato - 1 medium, diced
  • olive oil - 1 tablespoon

Steps

  1. In a bowl, mash the ripe avocados with a fork until creamy but still slightly chunky.
  2. Add the black beans, red onion, jalapeño (if using), cilantro, lime juice, cumin, and salt to the mashed avocado. Mix gently until well combined.
  3. Heat a skillet over medium heat and add the olive oil. Warm the tortillas for about 30 seconds on each side until soft and pliable.
  4. To assemble, lay a warm tortilla flat and spread a generous amount of the avocado-black bean mixture in the center.
  5. Top with shredded lettuce and diced tomato, then fold the sides of the tortilla over the filling and roll it up to enclose the mixture.
  6. Repeat with the remaining tortillas and filling. Serve immediately.
