- ripe avocados - 2 medium
- black beans - 1 cup, cooked and drained

- jalapeño - 1 small, finely chopped (optional)
- cilantro - 1/4 cup, chopped
- lime juice - 2 tablespoons
- cumin - 1 teaspoon
- salt - 1/2 teaspoon
- tortillas - 4 small (corn or flour)
- lettuce - 1 cup, shredded
- tomato - 1 medium, diced
- olive oil - 1 tablespoon
Steps
- In a bowl, mash the ripe avocados with a fork until creamy but still slightly chunky.
- Add the black beans, red onion, jalapeño (if using), cilantro, lime juice, cumin, and salt to the mashed avocado. Mix gently until well combined.
- Heat a skillet over medium heat and add the olive oil. Warm the tortillas for about 30 seconds on each side until soft and pliable.
- To assemble, lay a warm tortilla flat and spread a generous amount of the avocado-black bean mixture in the center.
- Top with shredded lettuce and diced tomato, then fold the sides of the tortilla over the filling and roll it up to enclose the mixture.
- Repeat with the remaining tortillas and filling. Serve immediately.
