- Red onion - 50 grams, thinly sliced
- Cilantro - 2 tablespoons, chopped

Steps
- In a bowl, combine the minced garlic, cumin, oregano, paprika, chipotle powder, apple cider vinegar, coconut aminos, olive oil, salt, and black pepper to create a marinade.
- Cut the pork shoulder into thin strips and add it to the marinade, ensuring all pieces are well coated. Cover and let it marinate in the refrigerator for at least 30 minutes.
- Heat a skillet over medium-high heat. Add the marinated pork strips and cook for about 10-15 minutes, stirring occasionally, until cooked through and slightly caramelized.
- Add the chopped pineapple to the skillet and cook for an additional 3-5 minutes until the pineapple is warmed and slightly caramelized.
- To assemble the burgers, use large romaine lettuce leaves as the 'buns'. Place a generous amount of the pork and pineapple mixture in the center of each leaf.
- Top with sliced red onion and chopped cilantro. Serve with lime wedges on the side for squeezing over the top.
