Ingredients

  • Sweet potato - 300 grams
  • Black beans - 100 grams, cooked and drained
  • Oats - 50 grams
  • Red onion - 1 small, finely chopped
  • Garlic - 1 clove, minced
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Egg - 1 large
  • Olive oil - 1 tablespoon
  • Whole wheat burger buns - 2
  • Avocado - 1 small, diced
  • Lime - 1, juiced
  • Tomato - 1 small, diced
  • Jalapeño - 1 teaspoon, minced (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and chop the sweet potato into cubes and boil in salted water for about 15 minutes, or until tender. Drain and let cool slightly.
  3. In a large bowl, mash the sweet potato with a fork or potato masher.
  4. Add black beans, oats, red onion, garlic, cumin, chili powder, salt, black pepper, cilantro, and the egg to the bowl. Mix until well combined.
  5. Form the mixture into 2 patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until golden brown.
  7. While the patties are cooking, prepare the avocado salsa by mixing diced avocado, lime juice, diced tomato, and minced jalapeño in a bowl. Season with salt to taste.
  8. To serve, place the sweet potato patties on whole wheat burger buns and top with avocado salsa.
