- Sweet potato - 300 grams
- Black beans - 100 grams, cooked and drained
- Oats - 50 grams
- Red onion - 1 small, finely chopped
- Garlic - 1 clove, minced
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cilantro - 2 tablespoons, chopped
- Egg - 1 large
- Olive oil - 1 tablespoon
- Whole wheat burger buns - 2
- Avocado - 1 small, diced
- Lime - 1, juiced
- Tomato - 1 small, diced
- Jalapeño - 1 teaspoon, minced (optional)
Steps
- Preheat the oven to 200°C (400°F).
- Peel and chop the sweet potato into cubes and boil in salted water for about 15 minutes, or until tender. Drain and let cool slightly.
- In a large bowl, mash the sweet potato with a fork or potato masher.
- Add black beans, oats, red onion, garlic, cumin, chili powder, salt, black pepper, cilantro, and the egg to the bowl. Mix until well combined.
- Form the mixture into 2 patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until golden brown.
- While the patties are cooking, prepare the avocado salsa by mixing diced avocado, lime juice, diced tomato, and minced jalapeño in a bowl. Season with salt to taste.
- To serve, place the sweet potato patties on whole wheat burger buns and top with avocado salsa.
