Ingredients

  • 200g sweet potato - peeled and diced
  • 1 can (400g) black beans - drained and rinsed
  • 50g breadcrumbs - whole wheat preferred
  • 1 small red onion - finely chopped
  • 1 clove garlic - minced
  • 1 tsp cumin powder
  • 1 tsp chili powder
  • 1/2 tsp smoked paprika
  • Salt and black pepper - to taste
  • 1 tbsp olive oil - for cooking
  • 2 whole grain burger buns
  • Lettuce leaves - for serving
  • Sliced tomato - for serving
  • Avocado slices - for serving

Steps

  1. Boil the diced sweet potato in a pot of water for about 10-15 minutes until tender. Drain and let cool slightly.
  2. In a large bowl, mash the sweet potato with a fork until smooth.
  3. Add the black beans to the bowl and mash them lightly, leaving some beans whole for texture.
  4. Stir in the breadcrumbs, chopped red onion, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix until well combined.
  5. Form the mixture into 2 equal-sized patties.
  6. Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
  7. Toast the whole grain burger buns in the same skillet for 1-2 minutes until slightly crispy.
  8. Assemble the burgers by placing the lettuce, patty, sliced tomato, and avocado on the bottom half of each bun. Top with the other half of the bun and serve.
