- 200g sweet potato - peeled and diced
- 1 can (400g) black beans - drained and rinsed
- 50g breadcrumbs - whole wheat preferred
- 1 small red onion - finely chopped
- 1 clove garlic - minced
- 1 tsp cumin powder
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- Salt and black pepper - to taste
- 1 tbsp olive oil - for cooking
- 2 whole grain burger buns
- Lettuce leaves - for serving
- Sliced tomato - for serving
- Avocado slices - for serving
Steps
- Boil the diced sweet potato in a pot of water for about 10-15 minutes until tender. Drain and let cool slightly.
- In a large bowl, mash the sweet potato with a fork until smooth.
- Add the black beans to the bowl and mash them lightly, leaving some beans whole for texture.
- Stir in the breadcrumbs, chopped red onion, minced garlic, cumin, chili powder, smoked paprika, salt, and pepper. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Heat olive oil in a non-stick skillet over medium heat. Cook the patties for about 4-5 minutes on each side or until golden brown and heated through.
- Toast the whole grain burger buns in the same skillet for 1-2 minutes until slightly crispy.
- Assemble the burgers by placing the lettuce, patty, sliced tomato, and avocado on the bottom half of each bun. Top with the other half of the bun and serve.
