- Fresh cilantro (chopped) - 2 tablespoons

Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the shrimp, olive oil, minced garlic, diced red bell pepper, sliced zucchini, chili powder, cumin, salt, and black pepper. Toss until the shrimp and vegetables are well coated.
- Spread the mixture evenly in a baking dish and bake in the preheated oven for 15 minutes.
- Remove the dish from the oven and sprinkle the shredded cheese on top. Return to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.
- Drizzle with lime juice and garnish with chopped cilantro before serving.
