Ingredients

  • Red lentils - 150 grams
  • Water - 500 ml
  • Olive oil - 1 tablespoon
  • Onion, finely chopped - 1 medium (about 100 grams)
  • Garlic, minced - 2 cloves
  • Cumin powder - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Paprika - 1 teaspoon
  • Cilantro, chopped - 2 tablespoons
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Whole wheat breadcrumbs - 50 grams
  • Egg - 1 large
  • Avocado, sliced - 1 medium
  • Whole wheat burger buns - 2
  • Lettuce leaves - 2
  • Tomato, sliced - 1 medium

Steps

  1. Rinse the red lentils under cold water and drain.
  2. In a medium saucepan, combine the lentils and water, and bring to a boil. Reduce heat and simmer for about 15 minutes, or until the lentils are soft and most of the water is absorbed.
  3. In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 5 minutes until the onion is translucent.
  4. Add the cumin, chili powder, paprika, salt, and black pepper to the skillet, stirring for 1 minute until fragrant.
  5. Combine the cooked lentils, sautéed onion mixture, cilantro, breadcrumbs, and egg in a large bowl. Mix until well combined.
  6. Form the mixture into 2 equal-sized patties.
  7. Preheat a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until they're golden brown and crispy.
  8. Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly browned.
  9. Assemble the burgers by placing a lettuce leaf, a lentil patty, sliced avocado, and tomato on each bun. Top with the other half of the bun and serve.
