Ingredients
- Red lentils - 150 grams
- Water - 500 ml
- Olive oil - 1 tablespoon
- Onion, finely chopped - 1 medium (about 100 grams)
- Garlic, minced - 2 cloves
- Cumin powder - 1 teaspoon
- Chili powder - 1 teaspoon
- Paprika - 1 teaspoon
- Cilantro, chopped - 2 tablespoons
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Whole wheat breadcrumbs - 50 grams
- Egg - 1 large
- Avocado, sliced - 1 medium
- Whole wheat burger buns - 2
- Lettuce leaves - 2
- Tomato, sliced - 1 medium
Steps
- Rinse the red lentils under cold water and drain.
- In a medium saucepan, combine the lentils and water, and bring to a boil. Reduce heat and simmer for about 15 minutes, or until the lentils are soft and most of the water is absorbed.
- In a skillet, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté for 5 minutes until the onion is translucent.
- Add the cumin, chili powder, paprika, salt, and black pepper to the skillet, stirring for 1 minute until fragrant.
- Combine the cooked lentils, sautéed onion mixture, cilantro, breadcrumbs, and egg in a large bowl. Mix until well combined.
- Form the mixture into 2 equal-sized patties.
- Preheat a non-stick skillet over medium heat. Cook the patties for about 5-6 minutes on each side, until they're golden brown and crispy.
- Toast the whole wheat burger buns in the same skillet for 1-2 minutes until lightly browned.
- Assemble the burgers by placing a lettuce leaf, a lentil patty, sliced avocado, and tomato on each bun. Top with the other half of the bun and serve.
