Ingredients
- Corn masa harina - 1 cup
- Water - 1/3 cup
- Salt - 1/2 teaspoon
- Cooked shredded chicken - 200 grams
- Refried black beans - 1/2 cup
- Queso fresco - 50 grams, crumbled
- Sour cream - 2 tablespoons
- Salsa verde - 1/4 cup
- Chopped onion - 1/4 cup
- Fresh cilantro - 2 tablespoons, chopped
- Avocado - 1/2, sliced
Steps
- In a bowl, combine the corn masa harina, water, and salt to form a dough. If the dough is too dry, add a little more water until it holds together.
- Divide the dough into 4 equal balls. Flatten each ball into a thick disc about 1/2 inch thick.
- Heat a skillet over medium heat. Cook each disc for about 2-3 minutes on each side, until lightly golden and cooked through.
- Once cooked, use your fingers to pinch the edges of each disc to form a border, creating a small well for the toppings.
- In the same skillet, warm the refried black beans and spread a spoonful on each sope.
- Top the beans with shredded chicken, followed by crumbled queso fresco, chopped onion, and sliced avocado.
- Drizzle sour cream and salsa verde over each sope and garnish with fresh cilantro.
- Serve warm and enjoy your high-protein breakfast!
