Ingredients

  • Corn masa harina - 1 cup
  • Water - 1/3 cup
  • Salt - 1/2 teaspoon
  • Cooked shredded chicken - 200 grams
  • Refried black beans - 1/2 cup
  • Queso fresco - 50 grams, crumbled
  • Sour cream - 2 tablespoons
  • Salsa verde - 1/4 cup
  • Chopped onion - 1/4 cup
  • Fresh cilantro - 2 tablespoons, chopped
  • Avocado - 1/2, sliced

Steps

  1. In a bowl, combine the corn masa harina, water, and salt to form a dough. If the dough is too dry, add a little more water until it holds together.
  2. Divide the dough into 4 equal balls. Flatten each ball into a thick disc about 1/2 inch thick.
  3. Heat a skillet over medium heat. Cook each disc for about 2-3 minutes on each side, until lightly golden and cooked through.
  4. Once cooked, use your fingers to pinch the edges of each disc to form a border, creating a small well for the toppings.
  5. In the same skillet, warm the refried black beans and spread a spoonful on each sope.
  6. Top the beans with shredded chicken, followed by crumbled queso fresco, chopped onion, and sliced avocado.
  7. Drizzle sour cream and salsa verde over each sope and garnish with fresh cilantro.
  8. Serve warm and enjoy your high-protein breakfast!
