- Bell pepper - 1/2 (diced)

- Black olives - 1/4 cup (sliced)
- Vegan mozzarella cheese - 1/2 cup
- Fresh cilantro - 2 tablespoons (chopped)
- Avocado - 1/2 (sliced)
- Lime - 1 (cut into wedges)
- Chili flakes - 1/4 teaspoon (optional)
Steps
- In a bowl, mix the corn masa harina, water, and salt until a soft dough forms.
- Divide the dough into 4 equal balls and flatten each ball into a thick disc about 1/2 inch thick.
- Heat a skillet over medium heat and lightly grease it with olive oil.
- Cook each disc for about 2-3 minutes on each side until slightly golden and cooked through. Remove from heat and set aside.
- In the same skillet, heat the tomato sauce for about 2 minutes until warm.
- Spread a spoonful of tomato sauce over each sope, leaving a border around the edges.
- Top with diced bell pepper, red onion, sliced black olives, and sprinkle with vegan mozzarella cheese.
- Return to the skillet and cover, cooking for another 5-7 minutes on low heat, until the cheese melts.
- Remove from heat and garnish with fresh cilantro and avocado slices.
- Serve with lime wedges and chili flakes on the side.
