Ingredients

  • Corn masa flour - 1 cup
  • Water - 1/2 cup
  • Salt - 1/2 teaspoon
  • Ripe jackfruit (canned in water, drained and shredded) - 200 grams
  • Olive oil - 1 tablespoon
  • Smoked paprika - 1 teaspoon
  • Cumin - 1/2 teaspoon
  • Garlic powder - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Lime juice - 1 tablespoon
  • Avocado - 1 medium, sliced
  • Fresh cilantro - 1/4 cup, chopped
  • Salsa of choice - 1/2 cup

Steps

  1. In a mixing bowl, combine corn masa flour, water, and salt to form a dough. Knead for a couple of minutes until smooth.
  2. Divide the dough into 4 equal balls. Flatten each ball into a thick disc (about 1/2 inch thick) to form the sopes.
  3. Heat a skillet over medium heat and cook each sope for about 3-4 minutes on each side until golden and slightly firm. Remove and set aside.
  4. In the same skillet, heat olive oil over medium heat. Add the shredded jackfruit and season with smoked paprika, cumin, garlic powder, black pepper, and lime juice.
  5. Cook the jackfruit mixture for about 5-7 minutes, stirring occasionally, until heated through and slightly crispy.
  6. To assemble, place the cooked jackfruit on top of each sope, then add sliced avocado, chopped cilantro, and your choice of salsa.
