- Corn masa flour - 1 cup
- Water - 1/2 cup
- Salt - 1/2 teaspoon
- Ripe jackfruit (canned in water, drained and shredded) - 200 grams
- Olive oil - 1 tablespoon
- Smoked paprika - 1 teaspoon
- Cumin - 1/2 teaspoon
- Garlic powder - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Lime juice - 1 tablespoon
- Avocado - 1 medium, sliced
- Fresh cilantro - 1/4 cup, chopped
- Salsa of choice - 1/2 cup
Steps
- In a mixing bowl, combine corn masa flour, water, and salt to form a dough. Knead for a couple of minutes until smooth.
- Divide the dough into 4 equal balls. Flatten each ball into a thick disc (about 1/2 inch thick) to form the sopes.
- Heat a skillet over medium heat and cook each sope for about 3-4 minutes on each side until golden and slightly firm. Remove and set aside.
- In the same skillet, heat olive oil over medium heat. Add the shredded jackfruit and season with smoked paprika, cumin, garlic powder, black pepper, and lime juice.
- Cook the jackfruit mixture for about 5-7 minutes, stirring occasionally, until heated through and slightly crispy.
- To assemble, place the cooked jackfruit on top of each sope, then add sliced avocado, chopped cilantro, and your choice of salsa.
