- Corn masa harina - 1 cup
- Water - 1/2 cup
- Ground beef (Halal) - 200 grams
- Refried beans - 1/2 cup
- Vegetable oil - 2 tablespoons
- Fresh cilantro - 1/4 cup, chopped
- Red onion - 1/4 cup, diced
- Tomato - 1 medium, diced
- Avocado - 1 small, sliced
- Sour cream - 1/4 cup
- Queso fresco - 50 grams, crumbled
- Salt - 1/2 teaspoon
- Ground cumin - 1/4 teaspoon
- Ground black pepper - 1/4 teaspoon
Steps
- In a mixing bowl, combine the corn masa harina and water. Mix until a soft dough forms. Divide the dough into 4 equal balls.
- Flatten each ball into a thick disc, about 1/2 inch thick, using a tortilla press or a rolling pin.
- Heat a non-stick skillet over medium heat. Cook the discs for about 2 minutes on each side until lightly browned and cooked through. Remove and set aside.
- In the same skillet, heat the vegetable oil over medium-high heat. Add the ground beef, salt, cumin, and pepper, cooking until the meat is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
- Spread a generous tablespoon of refried beans on each cooked tortilla. Top with the browned ground beef.
- Garnish each sope with diced tomato, onion, avocado slices, chopped cilantro, and crumbled queso fresco.
- Drizzle with sour cream before serving.
