Ingredients

  • Corn masa harina - 1 cup
  • Water - 1/2 cup
  • Ground beef (Halal) - 200 grams
  • Refried beans - 1/2 cup
  • Vegetable oil - 2 tablespoons
  • Fresh cilantro - 1/4 cup, chopped
  • Red onion - 1/4 cup, diced
  • Tomato - 1 medium, diced
  • Avocado - 1 small, sliced
  • Sour cream - 1/4 cup
  • Queso fresco - 50 grams, crumbled
  • Salt - 1/2 teaspoon
  • Ground cumin - 1/4 teaspoon
  • Ground black pepper - 1/4 teaspoon

Steps

  1. In a mixing bowl, combine the corn masa harina and water. Mix until a soft dough forms. Divide the dough into 4 equal balls.
  2. Flatten each ball into a thick disc, about 1/2 inch thick, using a tortilla press or a rolling pin.
  3. Heat a non-stick skillet over medium heat. Cook the discs for about 2 minutes on each side until lightly browned and cooked through. Remove and set aside.
  4. In the same skillet, heat the vegetable oil over medium-high heat. Add the ground beef, salt, cumin, and pepper, cooking until the meat is browned and cooked through, about 5-7 minutes. Drain excess fat if necessary.
  5. Spread a generous tablespoon of refried beans on each cooked tortilla. Top with the browned ground beef.
  6. Garnish each sope with diced tomato, onion, avocado slices, chopped cilantro, and crumbled queso fresco.
  7. Drizzle with sour cream before serving.
