Ingredients

  • Corn masa - 200 grams
  • Shrimp, peeled and deveined - 150 grams
  • Vegetable oil - 2 tablespoons
  • Garlic, minced - 2 cloves
  • Green bell pepper, diced - 1/2
  • Red onion, diced - 1/4
  • Tomato, diced - 1 medium
  • Cilantro, chopped - 2 tablespoons
  • Lime - 1, juiced
  • Salt - to taste
  • Pepper - to taste
  • Queso fresco, crumbled - 50 grams
  • Avocado, sliced - 1/2
  • Sour cream or Mexican crema - for drizzling

Steps

  1. In a bowl, mix the corn masa with a pinch of salt and enough water to form a soft dough. Divide the dough into 4 equal balls.
  2. Press each ball between your palms to form thick discs about 1/2 inch thick. Cook them on a hot skillet for 2-3 minutes on each side until slightly toasted.
  3. While the sopes are cooking, heat vegetable oil in a pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
  4. Add the diced green bell pepper and red onion to the pan, cooking until they soften, about 3-4 minutes.
  5. Stir in the shrimp and cook for another 3-4 minutes until they turn pink and opaque. Add the diced tomato, lime juice, salt, and pepper. Mix well and cook for 2 more minutes.
  6. Remove the shrimp mixture from heat and stir in chopped cilantro.
  7. To serve, place each sope on a plate, top with the shrimp mixture, and garnish with crumbled queso fresco, avocado slices, and a drizzle of sour cream or crema.
