- Corn masa - 200 grams
- Shrimp, peeled and deveined - 150 grams
- Vegetable oil - 2 tablespoons
- Garlic, minced - 2 cloves
- Green bell pepper, diced - 1/2
- Red onion, diced - 1/4
- Tomato, diced - 1 medium
- Cilantro, chopped - 2 tablespoons
- Lime - 1, juiced
- Salt - to taste
- Pepper - to taste
- Queso fresco, crumbled - 50 grams
- Avocado, sliced - 1/2
- Sour cream or Mexican crema - for drizzling
Steps
- In a bowl, mix the corn masa with a pinch of salt and enough water to form a soft dough. Divide the dough into 4 equal balls.
- Press each ball between your palms to form thick discs about 1/2 inch thick. Cook them on a hot skillet for 2-3 minutes on each side until slightly toasted.
- While the sopes are cooking, heat vegetable oil in a pan over medium heat. Add minced garlic and sauté for 30 seconds until fragrant.
- Add the diced green bell pepper and red onion to the pan, cooking until they soften, about 3-4 minutes.
- Stir in the shrimp and cook for another 3-4 minutes until they turn pink and opaque. Add the diced tomato, lime juice, salt, and pepper. Mix well and cook for 2 more minutes.
- Remove the shrimp mixture from heat and stir in chopped cilantro.
- To serve, place each sope on a plate, top with the shrimp mixture, and garnish with crumbled queso fresco, avocado slices, and a drizzle of sour cream or crema.
