Ingredients

  • Corn masa harina - 1 cup
  • Warm water - 3/4 cup

  • Pumpkin (cubed) - 200 grams
  • Olive oil - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Onion (chopped) - 1/4 medium
  • Cumin - 1/2 teaspoon
  • Chili powder - 1/2 teaspoon
  • Fresh cilantro (chopped) - 2 tablespoons
  • Feta cheese (crumbled) - 50 grams
  • Lime (juiced) - 1 tablespoon
  • Sour cream or Greek yogurt - for serving (optional)

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, mix the corn masa harina, warm water, and salt until a smooth dough forms. Let it rest for 10 minutes.
  3. Meanwhile, toss the pumpkin cubes with 1 tablespoon of olive oil, minced garlic, cumin, chili powder, and a pinch of salt. Spread them on a baking sheet and roast in the oven for 20-25 minutes until tender.
  4. Once the pumpkin is roasted, remove it from the oven and mash it slightly with a fork. Stir in the chopped onion and cilantro, and set aside.
  5. Divide the masa dough into four equal portions and shape each portion into a small disc (about 1 cm thick) on a parchment-lined baking sheet.
  6. Use your fingers to create a small rim around the edge of each disc to form a shallow bowl.
  7. Bake the masa sopes in the preheated oven for about 10-12 minutes until slightly golden.
  8. Remove the sopes from the oven and fill each one with the roasted pumpkin mixture. Top with crumbled feta cheese and drizzle with lime juice.
  9. Return the sopes to the oven for an additional 5 minutes to warm through. Serve hot, with sour cream or Greek yogurt if desired.
