- Olive oil - 2 tablespoons
- Garlic (minced) - 1 clove
- Onion (chopped) - 1/4 medium
- Cumin - 1/2 teaspoon
- Chili powder - 1/2 teaspoon
- Fresh cilantro (chopped) - 2 tablespoons
- Feta cheese (crumbled) - 50 grams
- Lime (juiced) - 1 tablespoon
- Sour cream or Greek yogurt - for serving (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a bowl, mix the corn masa harina, warm water, and salt until a smooth dough forms. Let it rest for 10 minutes.
- Meanwhile, toss the pumpkin cubes with 1 tablespoon of olive oil, minced garlic, cumin, chili powder, and a pinch of salt. Spread them on a baking sheet and roast in the oven for 20-25 minutes until tender.
- Once the pumpkin is roasted, remove it from the oven and mash it slightly with a fork. Stir in the chopped onion and cilantro, and set aside.
- Divide the masa dough into four equal portions and shape each portion into a small disc (about 1 cm thick) on a parchment-lined baking sheet.
- Use your fingers to create a small rim around the edge of each disc to form a shallow bowl.
- Bake the masa sopes in the preheated oven for about 10-12 minutes until slightly golden.
- Remove the sopes from the oven and fill each one with the roasted pumpkin mixture. Top with crumbled feta cheese and drizzle with lime juice.
- Return the sopes to the oven for an additional 5 minutes to warm through. Serve hot, with sour cream or Greek yogurt if desired.
