- baking powder - 1 tsp
- salt - 1/4 tsp
- coconut oil - 2 tbsp (melted)
- warm water - 1/4 cup
- cinnamon - 1 tsp (for dusting)
- sugar - 2 tbsp (for dusting)
- agave syrup - for drizzling (optional)
- oil - for frying
Steps
- In a mixing bowl, combine the flour, baking powder, and salt.
- Add the melted coconut oil and warm water to the dry ingredients, mixing until a soft dough forms.
- Knead the dough on a lightly floured surface for about 2-3 minutes until smooth.
- Cover the dough with a clean cloth and let it rest for 10 minutes.
- Roll out the dough to about 1/4-inch thickness and cut into squares or circles.
- Heat oil in a deep frying pan over medium heat, about 5 cm deep.
- Fry the dough pieces in batches until they puff up and turn golden brown, about 2-3 minutes per side.
- Remove the sopaipillas from the oil and drain on paper towels.
- Mix the cinnamon and sugar in a small bowl, then sprinkle over the warm sopaipillas.
- Serve immediately, drizzled with agave syrup if desired.
