  • baking powder - 1 tsp
  • salt - 1/4 tsp
  • coconut oil - 2 tbsp (melted)
  • warm water - 1/4 cup
  • cinnamon - 1 tsp (for dusting)
  • sugar - 2 tbsp (for dusting)
  • agave syrup - for drizzling (optional)
  • oil - for frying

Steps

  1. In a mixing bowl, combine the flour, baking powder, and salt.
  2. Add the melted coconut oil and warm water to the dry ingredients, mixing until a soft dough forms.
  3. Knead the dough on a lightly floured surface for about 2-3 minutes until smooth.
  4. Cover the dough with a clean cloth and let it rest for 10 minutes.
  5. Roll out the dough to about 1/4-inch thickness and cut into squares or circles.
  6. Heat oil in a deep frying pan over medium heat, about 5 cm deep.
  7. Fry the dough pieces in batches until they puff up and turn golden brown, about 2-3 minutes per side.
  8. Remove the sopaipillas from the oil and drain on paper towels.
  9. Mix the cinnamon and sugar in a small bowl, then sprinkle over the warm sopaipillas.
  10. Serve immediately, drizzled with agave syrup if desired.
