- Green beans - 100 grams, chopped
- Vegetable broth - 4 cups
- Tomato - 1 medium, chopped
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Cumin - 1 teaspoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the diced carrot, zucchini, potato, and bell pepper to the pot. Sauté for about 5-7 minutes, stirring occasionally.
