Ingredients

  • Tomatillos - 400 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Cilantro - 30 grams, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Jalapeño - 1 small, seeded and chopped
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 small, diced (for garnish)
  • Corn tortilla strips - 50 grams (for garnish)

Steps

  1. Rinse the tomatillos under cold water, remove the husks, and chop them into quarters.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Add the minced garlic and chopped jalapeño to the pot, stirring for another minute until fragrant.
  4. Stir in the chopped tomatillos and sauté for 3-4 minutes until they begin to soften.
  5. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
  6. Add lime juice, chopped cilantro, salt, and black pepper to taste. Simmer for an additional 5 minutes.
  7. Using an immersion blender, puree the soup until smooth (or blend in batches in a regular blender).
  8. Serve hot, garnished with diced avocado and corn tortilla strips.
