Ingredients
- Tomatillos - 400 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Cilantro - 30 grams, chopped
- Lime juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Jalapeño - 1 small, seeded and chopped
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 small, diced (for garnish)
- Corn tortilla strips - 50 grams (for garnish)
Steps
- Rinse the tomatillos under cold water, remove the husks, and chop them into quarters.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and chopped jalapeño to the pot, stirring for another minute until fragrant.
- Stir in the chopped tomatillos and sauté for 3-4 minutes until they begin to soften.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 15 minutes.
- Add lime juice, chopped cilantro, salt, and black pepper to taste. Simmer for an additional 5 minutes.
- Using an immersion blender, puree the soup until smooth (or blend in batches in a regular blender).
- Serve hot, garnished with diced avocado and corn tortilla strips.
