- Cumin - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Fresh cilantro - 2 tablespoons, chopped (for garnish)
- Lime - 1, cut into wedges (for serving)
Steps
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and carrots, and sauté for about 5 minutes until softened.
- Stir in the minced garlic, cumin, and oregano, cooking for an additional minute until fragrant.
- Chop the fresh tomatoes and add them to the saucepan, stirring well to combine.
- Pour in the vegetable broth and bring the mixture to a boil.
- Reduce the heat and let it simmer for about 15-20 minutes, until the tomatoes are soft and flavors meld.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend half of it and leave the rest as is.
- Season the soup with salt and black pepper to taste.
- Serve hot, garnished with chopped cilantro and lime wedges on the side.
