  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Fresh cilantro - 2 tablespoons, chopped (for garnish)
  • Lime - 1, cut into wedges (for serving)

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and carrots, and sauté for about 5 minutes until softened.
  3. Stir in the minced garlic, cumin, and oregano, cooking for an additional minute until fragrant.
  4. Chop the fresh tomatoes and add them to the saucepan, stirring well to combine.
  5. Pour in the vegetable broth and bring the mixture to a boil.
  6. Reduce the heat and let it simmer for about 15-20 minutes, until the tomatoes are soft and flavors meld.
  7. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend half of it and leave the rest as is.
  8. Season the soup with salt and black pepper to taste.
  9. Serve hot, garnished with chopped cilantro and lime wedges on the side.
