- Quinoa - 100 grams
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Garlic - 2 cloves, minced
- Onion - 1 small, diced
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Red bell pepper - 1 small, diced
- Tomato - 1 medium, chopped
- Cumin - 1 teaspoon
- Chili powder - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- Rinse the quinoa under cold water and set aside.
- In a pot, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
- Add the diced carrot, zucchini, and red bell pepper to the pot and cook for about 5 minutes until they start to soften.
- Stir in the chopped tomato, cumin, chili powder, salt, and black pepper, cooking for another 2-3 minutes.
- Add the rinsed quinoa and vegetable broth to the pot, bringing the mixture to a boil.
- Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and the vegetables are tender.
- Taste and adjust seasoning if necessary, then remove from heat.
- Serve hot, garnished with fresh cilantro.
