Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Red bell pepper - 1 small, diced
  • Tomato - 1 medium, chopped
  • Cumin - 1 teaspoon
  • Chili powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Rinse the quinoa under cold water and set aside.
  2. In a pot, heat the olive oil over medium heat and sauté the diced onion and minced garlic until translucent.
  3. Add the diced carrot, zucchini, and red bell pepper to the pot and cook for about 5 minutes until they start to soften.
  4. Stir in the chopped tomato, cumin, chili powder, salt, and black pepper, cooking for another 2-3 minutes.
  5. Add the rinsed quinoa and vegetable broth to the pot, bringing the mixture to a boil.
  6. Once boiling, reduce the heat to low, cover, and let it simmer for about 15 minutes or until the quinoa is cooked and the vegetables are tender.
  7. Taste and adjust seasoning if necessary, then remove from heat.
  8. Serve hot, garnished with fresh cilantro.
