Ingredients

  • Chicken breast - 200 grams
  • Chicken broth - 500 ml
  • Lime - 1, juiced and zested
  • Garlic - 2 cloves, minced
  • Onion - 1 small, diced
  • Tomato - 1 medium, diced
  • Bell pepper - 1/2, diced
  • Cilantro - 15 grams, chopped
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Avocado - 1/2, sliced
  • Tortilla strips - 30 grams

Steps

  1. In a medium pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, sautéing until the onion is translucent.
  2. Add the diced bell pepper and tomato to the pot, cooking for about 3 minutes until softened.
  3. Cut the chicken breast into bite-sized pieces and add to the pot. Cook until the chicken is no longer pink, about 5 minutes.
  4. Pour in the chicken broth and bring to a simmer. Add the lime juice and zest, salt, and black pepper. Let simmer for 10 minutes.
