- Fresh ripe tomatoes - 500 grams
- Vegetable broth - 500 ml
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Avocado - 1 small, diced (for garnish)
- Queso fresco - 50 grams, crumbled (for garnish)
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
- Chop the fresh tomatoes and add them to the pot, cooking until they soften, around 10 minutes.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
- Blend the soup using an immersion blender until smooth, or transfer it to a blender in batches and blend until smooth. Be careful with hot liquid.
- Return the blended soup to the pot, season with salt, black pepper, and lime juice. Stir to combine and heat through for another 5 minutes.
- Serve the soup hot, garnished with diced avocado, crumbled queso fresco, and chopped cilantro.
