Ingredients

  • Fresh ripe tomatoes - 500 grams
  • Vegetable broth - 500 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Avocado - 1 small, diced (for garnish)
  • Queso fresco - 50 grams, crumbled (for garnish)

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
  2. Add the minced garlic and cook for an additional minute, stirring frequently to avoid burning.
  3. Chop the fresh tomatoes and add them to the pot, cooking until they soften, around 10 minutes.
  4. Pour in the vegetable broth and bring the mixture to a boil. Reduce the heat and let it simmer for 10 minutes.
  5. Blend the soup using an immersion blender until smooth, or transfer it to a blender in batches and blend until smooth. Be careful with hot liquid.
  6. Return the blended soup to the pot, season with salt, black pepper, and lime juice. Stir to combine and heat through for another 5 minutes.
  7. Serve the soup hot, garnished with diced avocado, crumbled queso fresco, and chopped cilantro.
